Marinated beetroot salad



Beetroot is an exceptional vegetable, both nutritious and delicious. Once you fall in love with it, you'll be eating it all the time. Fall in love!

Wash the red beets, peel them and then slice thinly. Peel the onion, cut it into quarters and then cut into thin slices as well. Place the beets and the onions in a bowl, sprinkle with oil and add vinegar to taste. Stir everything and let marinate in the refrigerator, preferably overnight.

Sprinkle sunflower seeds or parsley on top.
