What’s in a carrot?

Anyone who has already wondered where the rich and intense colour of the carrot comes from should look into the term "carotenoids". These are also known as "fat-soluble pigments" and are not only available in carrots. Carotenoids can also be found in the cells of plants as well as in animals such as birds and their plumage. The carotenoids are distributed through the absorption of plants containing dyes. Beta-carotene, which is responsible for the conversion of vitamin A, is a type of carotenoids. Vitamin A can positively influence and improve our vision. So it is not surprising to hear when people say that carrots are noticeably good for our eyes.

Like many other vegetables, carrots consist largely of water. Nearly 90 percent of this is water. This makes the carrot extremely low in calories and hydrating. The approximately 3.6 grams of dietary fibre found in 100 grams of carrots swell in the stomach and purify our body in a healthy and natural way. Fresh and raw carrots in particular can make us feel satiated for longer.

In addition to the high water and fibre content, there are almost 5 grams of carbohydrates, 1 gram of protein and only 0.2 grams of fat in 100g of carrots. The vegetables get their sweet note from the 2 grams of naturally occurring sugar.
